What Makes a Great Chicken Kebab Marinade?
A proper chicken kebab marinade needs to do three things:

- Add flavour — a carefully balanced blend of spices, herbs and aromatics that work deep into the meat
- Help it char — a good marinade caramelises on the grill or in the oven, giving you that smoky, slightly crispy exterior
Traditional Turkish chicken shish marinades are built around chargrilled pepper paste — a rich, deeply flavoured base made from blended chargrilled peppers that gives a subtle paprika warmth and keeps the meat beautifully moist. Combined with oil, spices and seasoning, it creates that authentic Turkish restaurant flavour that's so hard to replicate from scratch at home.
You can add a spoonful of full-fat yoghurt to the marinade if you like — it adds extra creaminess and helps the spices cling to the meat — but it's completely optional. The marinade works perfectly on its own.
How Long Should You Marinate Chicken Kebabs?
This is where most people go wrong — they don't marinate for long enough. Here's our guide:
- Minimum: 2 hours — you'll get some flavour but the chicken won't be as tender
- Ideal: 8-12 hours (overnight in the fridge) — this is the sweet spot for deep flavour and maximum tenderness
- Maximum: 24 hours — any longer and the texture can start to soften too much
Our top tip: marinate your chicken the night before and leave it in the fridge overnight. You'll notice a huge difference in both flavour and texture.
Chicken Breast vs Chicken Thighs — Which is Better for Kebabs?
It depends on the style of kebab you're making!
For chicken shish, we prefer chicken breast. Cut into chunks and skewered, breast gives you that clean, lean bite you'd expect from a proper shish — and when marinated well overnight, it stays beautifully juicy and tender.
For a more doner-style result, chicken thighs are the better choice. The higher fat content means they stay moist and succulent even with longer cooking, and they shred beautifully for wraps and flatbreads.
Either way, the key is a good marinade and not overcooking — aim for an internal temperature of 74°c and always rest the meat before serving.
