Leftover Pulled Turkey Flatbread with Spicy Feta Yoghurt

This is the perfect recipe for using up your leftover turkey from christmas day, ideal if you have people coming over because it can all be prepped ahead of time and placed in the centre of the table for everyone to help themselves. If you don't have leftover Turkey then don't worry this recipe will also work with chicken, beef or lamb (just substitute the Chicken Shish Marinade for Lamb Shish Marinade). We made our flatbreads using this recipe but you can also use shop bought and heat them through if you are shorter on time. This recipe is great for when you're getting a bit fed up of the same christmas flavours and want something a bit fresh and lighter. 

Ingredients

Turkey Flatbreads

Atom Yoghurt

  • 300g Thick Strained Greek Yoghurt
  • 100g Feta Cheese 
  • 1tsp Pul Bibir 
  • 1 Garlic Clove, crushed 

Salad 

  • 1/2 Cucumber, sliced diagonally in 1cm pieces
  • 1 Beef Tomato, sliced into 1cm pieces 
  • 4 Spring Onions, sliced 
  • 1tbsp Turkish Salad Dressing 

Serve with these Pickled Red Onions from our Pulled Lamb Slider recipe and our Turkish Chilli Sauces

Cooking Instructions

  1. Take the leftover Turkey and shred it up, add it to a large frying pan over a medium heat, add in the Chicken Shish Marinade and mix it through so all of the Turkey is coated. Fry off or 3-5mins to cook off the marinade. Then pour in the chicken stock and bring to the boil, reduce the heat and leave to simmer for 20mins so that stock turns into a sauce coating the Turkey. You want a little bit of liquid left so that it is not totally dried out. 
  2. While the Turkey is simmering prepare the yoghurt & salad. For the yoghurt,  put the yoghurt into a large bowl and crumbled the feta in, add the crushed garlic and pul bibir and mix. Place in the fridge until you are ready to use it. 
  3. For the salad, arrange the chopped vegetables on to a platter and drizzle over the Turkish Salad Dressing
  4. Now warm up your flatbreads either in the oven, toaster or microwave.
  5. Once the Turkey has cooked down and the stock has turned into a sauce, place the Turkey onto a sharing platter. Place the turkey, flatbreads, salad, yoghurt, pickled onions and Turkish Chilli Sauce into the centre of the table and allow everyone to build their own flatbreads! Enjoy!
